Pierre Clavel started in 1986, in the Méjanelle sector, quickly joined by his wife Estelle, of Breton origin, who has been making wine since 2014. Over time, the terroirs of Pic Saint-Loup and Terrasses du Larzac have been added. Today, their two sons, Antoine and Martin, are gradually taking over, with the intention of continuing along this path and going even further. Certified in organic farming since 2007, this agricultural complex around the farmhouse representing 20 hectares of olive trees, truffle oaks, cereals; a market gardener cultivates part of the land. |

I look typical of the Languedoc roses with my clear salmon colour with some hints of orange. As I am 50% rose de saignee, you can assume that it helped extract colour.

The least you can say about me, is that I smell like a bowl of fresh air. You’ll get those fruity aromas of crushed strawberries and redcurrant, accompanied by a delicate but present smell of lemon zest.

I am a dry rose, and I taste quite similar to how I smell, plus a touch of floral flavours such as roses and geraniums. My texture is creamy and contrasts well with a nice acidity that keeps everything together and very refreshing.

With every kind of Mediterranean food, including tapas, couscous, grilled sausages above all, I’d like to see you try and make a very “South Eastern France” recipe called “encornets”. Encornet is French for calamari, and in this area of France they are quite popular. Especially with a good sauce a l’escabeche. |
