We harvest the grapes at maturity, early in the morning to respect the fruit; then the must will be fermented in stainless steel tanks in our cellars. The refermentation of the sugars in bottles allows the decisive step: the foaming. It is this natural reaction that will give the wine its effervescence. |

I am round and creamy on the palate and backed up by my classic Chenin acidity. I have sleek pear, green apple and green plum notes with aromas of orange zest, lemon and honeysuckle. I have energetic citrus and orchard fruit flavors complemented by anise and honey, giving an impression of richness as well as vivacity. I finish by honey and floral notes and cling nicely. |

I go very well with all kinds of seafood dishes, especially rich shellfish, like shrimp, crabmeat or lobster. I can also be paired well with richer dishes like roast pork. |
