Turon graduated with Honours Degree of Bachelor of Viticulture and Oenology from the University of Adelaide in 2010, working for various wineries during and after his study, once he has completed his journey, Turon then decides to establish his winery in a heaven of cool-climate wine, Adelaide hills. He has been making wines in this particular area over 10 years.

It has adopted minimal intervention approach to winemaking means having the confidence to stand back and let the wine be itself, but the knowledge to step in and guide the wine in the right direction when necessary. To achieve that, it begins in the selection of the vineyard site. Terroir is the natural environment in which a particular wine is produced and it believes that this is the largest influencer on wine quality. Selecting the right sub-region, site, soil and mesoclimate within the cool and diversified Adelaide Hills region is a crucial step in what allows our wines to reach their full potential.

The fruit is hand-picked in Lenswood, planted on north-facing slope. The fermentation occurs with wild yeasts and 30% whole bunch, following by French oak maturation for 9 months, 20% new. The 2019 Pinot Noir is brilliantly awarded 95 points by James Halliday's Wine Companion.

On the nose, It is seductive with fragrant rose pedal, tangy red fruits like strawberry, raspberry, hawthorn, underlying lingering rhubarb pie, subtle and well-integrated spicy, woody notes from French oak maturation.

One the palate, an impressive mixed red fruit with mouth-watering acidity on attack, following by homemade rhubarb pie, delicate sweet spices and woody flavours on mid-palate through aftertaste. It is an appealing, elegant yet textural red wine with velvety tannins and persistent length. It benefits from lightly decanting for 20 minutes, or it can be ageing for up to 5 years.

I go very well with grilled or seared crispy-skinned salmon fillet or fine poultry such as crispy roast duck with a casual seasoning of dill and parsley. Alternatively, I am perfectly matched with goat cheese or “chevre frais” with chives and  an iconic Mediterranean dish from Provence, ratatouille which consists of veggies and rosemary.
