This prestigious Loire sparkling house founded back in 1912, was acquired by Maison Bollinger in 1973. The quality of its production has reinforced since the acquisition of Maison Bollinger and Michel Villedey who has been in charge of the estate. The fruit is 100% estate-grown and hand-harvesting. The cuvee comprises 60% of Chenin Blanc, 20% of Chardonnay and 20% of Cabernet Franc which aims to enhance complexity and weight, from several exceptional areas in Loire Valley where the soil is predominated by chalky soil, including Côtes de Saumur, Coteaux de St Léger, Puy Notre Dame, Bay Layon . Once the secondary fermentation has occurred in individual bottles by méthode traditionelle, it then rests 24 months on lees at underground ‘caves’ in Saumur near Loire River with a dosage of 12 grams per litre. |

One the palate, it comes a creamy, mouth-coating mousse with charming fruit notes of apple, quince, lemon and a hint of hawthorn, accompanying with savoury yeasty, bread, pastry flavours. Overall, I am a vibrant, well-balanced and complex traditional sparkling wine with delicate mousse, and I can be held in your fridge for up to 5 years after released.

I go very well with apple pie, pear pie or a pear-chocolate crumble. Also, I am perfect with savouries like goat cheese, cherry tomato, bacon, sausage and seafood dishes. |
