Colour: Opaque sapphire with a purple rim.
Aroma: Intense perfume of violet florals complimented with green olive, red cherry, cranberry and dried herbs of oregano and sage.
Palate: Fleshy fruit palate of red currant, cranberry and rhubarb. Slatey mouth-watering natural acidity is partnered with powdery fruit tannins adds complexity and structure.
A great follow-up to the 2020 vintage! It will be interesting to see how this wine develops in the bottle over the next 5-8 years. Well suited to Mediterranean dishes, spit roasted lamb or chargrilled quail. The fruit was sourced from a secret single vineyard in McLaren Vale. The grapes were handpicked at optimal ripeness and crushed to a single Tonnellerie Quintessence Pearle oak fermenter. The wine underwent a natural fermentation with hand plunging 3 to 5 times daily until the completion of fermentation. The wine was then pressed through a small hand basket press and filled to a single neutral French oak barrique for 10 months. The wine completed natural malolactic fermentation in barrel with no SO2 used until bottling. The wine was neither fined, nor filtered.
