VARIETIES:
Shiraz (65 year old dry grown vines) and Grenache (25 year old dry grown vines)
OAK:
4 year old American Oak
WINEMAKING:
Both picked two days apart in early March. The shiraz was crushed and de-stemmed, fermented on skins for 9 days and pumped over twice a day. This extracted maximum colour and flavour. The grenache had a gentler ride, soft pressed, fermented on skins for 8 days and stored in old oak
AREA:
Blewitt Springs and McLaren Flat
This is the fourth release of this wine drawing fruit from our Blewitt Springs vineyard sitting on sandy soil offering excellent drainage and resistance to disease and parcels bought in from Dog Ridge’s wonderful Grenache vineyard in McLaren Flat. The vines are 65 and 25 years old respectively producing fruit of uncommon intensity and flavour. This wine is flavoursome showing chocolate, spice and a sweet earthy palate finishing with powdery tannins and length. Enjoy now or cellar up to 10 years.
