In the late Sixties Andre Valat decided to settle down in the area from where the family had its roots. Then, he acquired Chateau Saint Maurice. After finishing wine school, his son Christophe joined him in the firm in 1982, and from 1993 he has been in charge of the property. At that time, he acquired a property in Roquemaure with 12 ha. Lirac and Cotes du Rhone, Chateau Boucarut. The total area of Chateau Saint Maurice is 120 ha, with the main holdings in Cotes du Rhone Village Laudun (Chateau Saint Maurice) and Vin du Pays du Gard (Domaine du Nizon).
The Domaine Les Cascades is a small estate located in the middle of the Corbières and created in 2010. The entire vineyard has been managed for 8 years using sustainable viticulture; systematic trellising, grassing of the rows, application of organic amendments only, selective weeding. Sustainable viticulture also means adapted phytosanitary treatments, considering the weather constraints. The work is mainly done by hand in reflection by the mastery of biodiversity and the quality of the grapes that will give the wine.
The Domaine Les Cascades is above all the fruit of a singular adventure around wine. First of all because they consider that only exceptional grapes make the quality of our wines. They pay attention to the cultivation of the vine while respecting its environment. Then, because each wine is distinguished by its terroir and its grape varieties whose authenticity must be equal to its gustatory value. Finally, they want the friendship and passion that characterize their adventure to be expressed through the generosity, ardor and freshness of their wines.
They proceed with 2 donkeys named Margaux and Pinot Noir and sheep (named Pétrus, Roussanne and Syrah) which they leave free in their vineyards. They mow the grass during pruning in winter and remove the leaves in summer.
They are located in Ribaute, in the Aude region of Languedoc. Their values: to work the land in harmony with nature, and to promote biodiversity. They produce organic wine and beer, as well as olives, truffles and saffron. You can come and discover their bed and breakfast for which they produce the organic vegetable garden!
This Côtes du Rhône seduces us with its oak and nutty notes. Bouquet of black berries, candied plums and lavender. In mouth, strong presence of red fruits and spices: raspberry, red plums, some spices. Long spicy finish with a pleasant bitter tail, quite short. To be tasted with chicken and vegetables.
